In recognition of his researches in food sanitation and hygiene, quality control and food microbiology. Dr. Mabesa’s studies helped reduce incidence of microbiological contaminants, thus maintaining the quality, shelf-life and safety of various foods. His work on fish sauce manufacture and corresponding ingredients such as salt has resulted in a clearer understanding of the “patis” production process towards greater economy, safety and efficiency.
